The classic main course of Pān-toh. You are able to learn the secret of the origin of the dish by tasting it from the usage and flavor of the ingredients. Mountain Series focuses on “Tea planting” to discuss the influence of different tea varieties and its terroir on the flavor of tea.

The flavor of tea liquid is deeply influenced by the terroir and tea varieties of different regions. 

Teas of Mountain Series present the unique charm of each high mountain tea plantation in Taiwan. You can savor the same tea variety in different mountain tea plantations, as well as the flavor difference of different tea tree varieties in the same plantations.

 

Just the same as tasting wine, we will pay attention, particularly in its labeling of the producing area. The flavor is various because of different region, even the wine is produced by the same variety of grapes. Tea is no different.

Different types of tea also affect the formation of tea flavor. Tea varieties can be categorized into two major types, large-leaf species and small-leaf species. Most of the tea grown in Taiwan is small-leaf species, and the most common ones are Chin-Shin Oolong and Jin-Xuan.
