Taiwanese Green Tea(綠茶)

Unlike non-oxidized Japanese Green Tea, Taiwanese Green Tea is lightly oxidized (5–10%), giving it a soft, delicate, and less bitter taste. After harvesting, the fresh leaves undergo a brief withering process to preserve natural aroma and color.

The leaves exhibit a bright jade green hue with silvery tips. When brewed, the tea liquor is clean and light green, offering vivid freshness and a subtle grassy fragrance. On the palate, it delivers a brisk sensation with savory dried nori notes and a gentle sweet herbaceous finish.

Oolong Teas (烏龍茶)

“Oolong” means “Dark Dragon” in Chinese. These semi-oxidized leaves (25–35%) sit between green and black tea, offering a broad and nuanced flavor spectrum. Handcrafted, hand-rolled, and often hand-coiled, oolongs are among the most labor-intensive teas, carefully processed by skilled tea makers to produce unique and refined flavors.

High Mountain Oolong Tea is grown above 1,000 meters in Taiwan’s central mountains. The brewed tea is golden-yellow with a long-lasting, rich flavor and a lingering, fragrant aroma. Oolongs range in taste from fresh and floral to mellow and warming, or dark and intense, depending on the cultivar and oxidation level.

Taiwanese Black Tea (紅茶)

Unlike the strong and astringent character of Indian Assam teas, Taiwanese Black Tea is lighter and naturally sweet, with a honeyed aroma. This special flavor is enhanced by a unique organic environment: tea plants are grown pesticide-free, and young leaves are occasionally nibbled by cicadas, which subtly influences the aroma and taste during processing.

When brewed, the leaves produce a rich amber liquor with a refreshing floral fragrance. On the palate, the tea is smooth, with a gentle sweetness that lingers as an aftertaste, offering both complexity and elegance.
